In our attempt to get back on track with a 80/20 healthy diet, we've returned to having more lean meats in our dishes - pork has been demoted to twice a week and our freezer is stocked with chicken breasts instead. Because this chicken part isn't the tastiest of all and can actually be nauseatingly similar to cardboard (LoL) when you eat it repeatedly, we're always on the lookout for delicious ways to cook & serve it.
So here's an easy one the hubby successfully cooked up last week that's super quick, simple and malinamnam cheat meal that won't throw you too far off from your fitness goals :)
Ingredients:
1/2kg Chicken breast, cut into bite sized pieces
2 Carrots, roughly chopped
1 1/2 cup All purpose cream
2 Carrots, roughly chopped
1 1/2 cup All purpose cream
1 White onions, finely chopped
2 Potatoes, diced
3 cloves Garlic, chopped
3 tbsp flour
3 tbsp Melted butter
1pc chicken cube
1/2 cup Parmesan cheese
1/2 cup Japanese bread crumbs
Salt
Pepper

- sautée onions and garlic, then add carrots, potatoes & chicken. Cook until meat is done.
- heat butter & add flour and mix until consistency is smooth; then stir in cream
- add previously cooked chicken, carrots & potatoes and chicken cube; simmer for 3-5 minutes
- sprinkle Japanese bread crumbs and Parmesan cheese on top and bake for 10mins at 175C
