Oven baked sweet potato fries

Sharing hubby's homemade baked sweet potato fries - perfect alternative to fast food snacking this weekend! 


2 medium sized sweet potatoes, sliced (we used the orange one)
extra virgin olive oil
garlic powder
parmesan cheese, grated
ground black pepper

1) Soak the sliced sweet potatoes in cold/freezing water for 30 minutes - this will keep them from turning mushy while baking
2) Drain the water & pat dry with paper towels
3) Mix all dry ingredients in a sandwich bag. We unfortunately didn't measure, but about a pinch or 2 of each the spices was enough, with about 2 tablespoons of grated parmesan. You can basically use whatever spices you prefer - onion powder, all spice, bbq rub, etc.
4) Throw in the sweet potatoes into the spice bag to coat all of it
5) Spread out the sweet potatoes on a baking pan and drizzle with olive oil for extra crisp
6) Bake at 450 deg F (around 232 deg C)
